Spicy Maple Garlic Salmon

The kind of dish you make after a long day at work, when you're dead tired but you want something yummy and healthy for dinner - super quick and easy with very little clean up!


Literally all you do is put the salmon on a cookie tin with parchment paper, mix up this simple sauce, pour it over the salmon, and throw on the pan some veggies you like. 20 min later – you’re set! And you get delicious, sweet, savory, perfectly cooked salmon.

Feeds 2. Prep Time: 7 min. Cook time 20-25 min.


Ingredients:

2 pieces of salmon filet

2 tbsp maple syrup

4 cloves garlic – chopped

1 chopped red chili (optional!)

2 chopped carrots

2 handfuls frozen green beans

1 tbsp olive oil

Salt and Pepper to taste

(honestly – throw in whatever veggies you like! Bell peppers, sweet potato, mushrooms, zucchini – all would go well with this!)


Instructions:

  1. Heat oven to 180 degrees Celsius

  2. Put parchment paper on your cookie tin and place the salmon in the center (you can also put it in an oven-safe dish).

  3. Mix the chopped garlic, 2 tablespoons maple syrup, a pinch of salt and a pinch of pepper in a cup and then pour it onto your salmon.

  4. If you like spicy, put the chopped red chili on your salmon pieces.

  5. Sprinkle the mixed veggies around the salmon

  6. Drizzle olive oil over your veggies, and add another pinch of salt and pepper on them for taste

  7. Put in the preheated oven, on the middle rack, for 20-25 minutes (I cooked it for 20 and it was perfect!)

  8. Serve with veggies and white rice or quinoa – whatever you like best!
